4 light summer salads

Here is the recipe for 4 light summer salads, 4 tasty light and fresh salads that are easy and simple to make for a light meal.

1 – Greek salad:
Ingredients for 2 people:
  • 2 diced tomatoes
  • 1 cucumber sliced
  • 1/2 yellow pepper cut into pieces
  • 1/2 red onion chopped
  • 80 g of pitted black olives
  • 1 tablespoon olive oil
  • 100 g feta
  • salt and pepper
Preparation :

Place all the ingredients in a salad bowl, mix and place in the fridge.

2 – Shrimp and melon salad:
Ingredients for 2 people:

150 g of lettuce
120 g of pre-cooked and peeled prawns 100 g of pre-cooked chickpeas
1 stalk of celery, chopped
2 slices of melon, diced juice
and zest of 1 lemon
1 tablespoon of olive oil salt
, pepper

Preparation :

Place all the ingredients in a salad bowl, mix and place in the fridge.

3 – Tuna salad:
Ingredients for 2 people:

80 g of lettuce sprouts
12 cherry tomatoes
60 g of mozzarella balls
120 g of natural tuna
1 tablespoon of olive oil
salt, pepper

Place all the ingredients in a salad bowl, mix and place in the fridge.

4 – Caesar Salad:
Ingredients for 2 people:

150 g of lettuce
150 g of baked chicken breast
1 slice of toasted bread
20 g of parmesan
For the sauce:
1 jar of plain yogurt
Chives 0%
2 tablespoons of lemon juice

Preparation :

Place the lettuce, chopped chicken, diced toast and parmesan in a salad bowl.
Prepare the sauce by mixing the yogurt with the chives, lemon juice, salt and pepper and pour it over the salad.
